When it's Monday in our house it means one thing.... Mindful Monday. Well it used to be Meatfree Monday but I now prefer to call it Mindful Monday. On Mondays, 95% of the time, we don't eat meat; I am concious to be grateful for our life; and I want to express genuine thanks as much as possible.
So why don't we eat meat? A lot of illness and disease can be attributed to the large quantities of meat, particularly red meat, we consume in Western society. Scientists are linking excess meat consumption with heart disease and increased cancer. By having at least one (sometimes more) meat free days gives me the opportunity to experiment with new recipes and try different foods - some which my 3 children have embraced!
Another reason I am learning to be more mindful is because of the impact livestock production has on the environment. Eating such enormous amounts of meat causes more environmental change than any other activity - in fact 30% of drinking water is consumed by livestock! Many scientific articles have made comment that there is "no other activity that has a bigger impact of the planet than raising livestock".
This is one recipe we tried recently for vegan burgers using chickpeas. The children ate mini burgers and they were a hit!
